Pizza Screen vs Pizza Pan: Why Your Base Is Soggy

Heavy duty aluminium pizza screen for commercial pizza oven
Quick answer
A soggy base is usually trapped steam. A pizza screen is a perforated aluminium mesh that lets heat reach the base directly and lets steam escape, so the crust sets crisp. A solid pan traps that steam underneath. Screens run 10 to 16 inches, from £5.50.

Why does my pizza base go soggy?

Steam, with nowhere to go.

As a pizza bakes, moisture leaves the dough and the toppings. On a solid pan, that moisture is trapped between the base and the metal. It condenses. The base sits in it. You get a pale, damp, floppy bottom no matter how long you bake it — and baking longer just burns the top while the base stays wet.

A pizza screen is a perforated aluminium mesh. Heat reaches the base directly through the holes, and the steam escapes downwards instead of pooling. The crust sets and crisps.

That is the whole difference, and it is why most commercial pizza kitchens use screens.

Screen or pan — which should I use?

Pizza screen Solid pan
Base texture Crisp — direct heat, steam escapes Softer, can be soggy
Bake time Faster — heat reaches the base directly Slower — heat conducts through the metal
Best for Thin and standard bases; high-volume service Deep pan, Detroit-style, focaccia — where you want a soft, rich base
Handling Light, stackable, easy to load and turn Heavier

Pick by the pizza you're making, not by habit. Deep pan wants a solid pan. A thin base on a solid pan will disappoint you every time.

What size screen do I need?

Match the screen to your pizza size, not your oven.

  • 10 inch — £7.00 — personal / small
  • 12 inch — £7.50 — the most common commercial size
  • 14 inch — £8.00 — large
  • 15 inch — £9.00 — extra large
  • 16 inch — £10.00 — sharing / family

Most pizza kitchens hold several of their main size and a few of the others. Screens are light and stack, so keeping spares costs you almost nothing in space — and a screen in the wash is a screen you can't bake on.

How do I season a new pizza screen?

This matters. A brand-new screen will stick, and people conclude the screen is faulty when it simply isn't seasoned yet.

Follow your own oven's guidance, but the principle is:

  1. Lightly oil the screen — a thin film, not a coating. Excess oil goes gummy and sticky, which is worse than none.
  2. Heat it in the oven so the oil bakes into the surface.
  3. Repeat a few times. The screen darkens as it seasons.

A well-seasoned screen goes dark and releases cleanly. That darkening is not dirt — it is the seasoning, and scrubbing it off puts you back to square one.

Cleaning — the mistake that ruins screens

  • Don't scrub a seasoned screen back to bare metal. You destroy the non-stick layer you spent weeks building.
  • Don't soak them. Water sits in the mesh and the seasoning goes.
  • Brush off debris and wipe. That is usually all a screen needs.
  • Dry them fully before stacking.

Treat a screen like a cast-iron pan, not like a baking tray. The dark, slightly greasy look is exactly right.

Frequently asked questions

Why does my dough stick to a new screen?

Because it isn't seasoned yet. New screens stick. Season it and the problem disappears — it isn't a fault.

Can I put pizza screens in the dishwasher?

It will strip the seasoning and you will be back to sticking. Brush and wipe instead.

Do screens work in a deck oven and a conveyor?

Screens are widely used in commercial pizza ovens of both types. Follow your oven manufacturer's guidance on what can go directly on the deck or belt.

My base is crisp but pale. What now?

That's a heat problem rather than a steam problem — the base is drying but not colouring. Look at your deck temperature and bake time. A screen fixes soggy; it can't fix cold.
