Genuine replacement high-limit thermocouple for the Henny Penny CFE-415 open fryer series. This is the dual thermocouple version (Part No. 156986), introduced as the updated design on all CFE-415 fryers manufactured AFTER December 2020.
The high-limit thermocouple is a safety-critical component. It monitors oil temperature independently of the main temperature control probe. If the oil temperature rises above the safe maximum threshold, the thermocouple triggers an automatic shutdown of the heating element — protecting the fryer, the kitchen, and staff from a dangerous overheat event.
The 156986 dual thermocouple is the updated, current production design — replacing the earlier single thermocouple (93968). The dual design provides improved safety redundancy and more reliable high-limit protection.

⚠ Which Thermocouple Do I Need?
This is the most important question before ordering. Henny Penny changed the thermocouple design on the CFE-415 series in December 2020. The two versions are NOT interchangeable — you must match the part to your fryer build date.

How to find your build date: Check the silver data plate on the back or side of the fryer. It shows the manufacture date and serial number. If unsure, contact us with your serial number and we will confirm the correct part before you order.

Installation Notes
Always isolate and switch off the fryer completely before replacing any thermocouple. Allow the oil to cool fully. Note the thermocouple routing and connector orientation before removal. After fitting, power on and verify correct operation before returning to service. Installation must be carried out by a qualified catering engineer. Remember: 2 thermocouples are required per CFE-415 fryer — check both before service.
