Commercial Gas Fryer Troubleshooting: Won't Heat or Light
A gas fryer that won't come up to temperature stops service faster than almost any other failure in the kitchen. It is also one of the most diagnosable: gas fryers fail in a short list of ways, and the failed part is usually cheap.
This guide follows the order an engineer works in — pilot, then safety cut-out, then temperature control, then the valve. Work down it and you will know what to order. For the parts themselves, see all gas equipment parts.
Why won't my gas fryer's pilot light stay lit?
Nine times out of ten this is the thermocouple, and a fryer is the harshest environment a thermocouple ever lives in.
The thermocouple tip sits in the pilot flame and generates roughly 25–30 millivolts. That tiny voltage energises an electromagnet inside the gas valve, and that magnet is the only thing holding the gas on. When the thermocouple weakens with age, or the pilot flame stops properly enveloping it, the magnet drops out and the fryer shuts down.
Check in this order:

Fitted a new thermocouple and it still drops out? If the pilot is strong and blue and the new thermocouple is correctly positioned, the electromagnet in the gas control valve has failed — it can no longer hold on the voltage it is being given. On many valves the magnet unit is a separate part and far cheaper than a complete valve.
Why does my fryer keep tripping the high limit?
The high-limit thermostat is the safety cut-out that kills the gas if the oil goes above a safe temperature. It is set above your normal frying range, and its job is to stop an oil fire.
Treat a tripping high limit as a symptom, not an inconvenience. It has either done its job because something else is wrong, or it has failed. Never bypass it — a fryer full of oil above its safe limit is how kitchen fires start.
Work out which it is:
- Oil level too low. The most common cause. Below the minimum mark, the oil around the element or tube overheats locally even though the bulk oil seems fine. Top up to the fill line and retest.
- The main thermostat has failed. If the operating thermostat no longer shuts the gas off at setpoint, the oil keeps climbing until the high limit catches it. The high limit is doing exactly what it should — the thermostat is the fault.
- Heavy carbon build-up. Carbon on the tank walls and tubes insulates the oil from the sensing bulb and creates local hot spots.
- Degraded oil. Old oil carbonises faster and behaves unpredictably at temperature.
- The high limit itself has failed. Only conclude this after ruling out the above. They do fail, usually shut, and then the fryer won't heat at all.
Most fryers have a manual reset — a small button, often behind the door or panel — that must be pressed once the oil has cooled. If it trips again immediately, stop and diagnose. Repeatedly resetting a tripping high limit is how a fault becomes a fire.
Why won't my fryer reach frying temperature?
The fryer lights, the burner runs, but the oil sits well below setpoint or takes far too long to recover between baskets.
- Check the thermostat first. The operating thermostat senses oil temperature through a capillary bulb in the tank. If the bulb has come loose from its clip, or the capillary is kinked or fractured, the thermostat reads wrongly and controls wrongly. Verify with a probe thermometer in the oil before condemning anything.
- Check the burner flame. Open the front and look. Even, crisp blue across the whole burner is healthy. Patchy, weak or yellow flames mean restricted gas or blocked burner jets — a fryer's burners collect oil vapour and carbon like nothing else.
- Check the gas supply. If several appliances are weak at once, it is supply pressure, not the fryer. That needs a manometer and an engineer.
- Rule out the obvious. Overfilling with cold oil, dropping too much frozen product at once, or a fryer that is simply undersized for the covers will all look like a fault and aren't one.
Slow recovery specifically — where the fryer reaches temperature eventually but crashes when you drop a basket — usually points at burner performance or gas rate rather than the thermostat.
Why is my fryer heating unevenly or scorching the oil?
Uneven heat in a gas fryer comes from the burner and tube side, not the oil.
- Partly blocked burner ports or jets — some sections of the burner run weak, so heat goes into the tank unevenly.
- Carbon crust on the heat exchange tubes — insulates the tubes and forces the burner to run harder for the same oil temperature.
- A thermostat bulb out of position — reads one part of the tank while another part cooks.
Scorching, dark oil that degrades faster than it should is usually a local hot spot rather than a temperature setting problem. Look for the cause on the burner side.
Why does my fryer shut down mid-service?
Sort it by what stopped:

What gas pressure should a UK fryer run at?
Most fryer troubleshooting articles online are American and quote inches of water column, which is no use to you.
In the UK, commercial catering appliances are set up around 20 mbar for natural gas and 37 mbar for propane (LPG). The correct figure and the correct injector for your gas type are on the appliance data plate.
Two things follow from that. Pipe threads here are BSP, not the NPT sizes on US parts listings — check before ordering gas pipe fittings. And converting a fryer between natural gas and LPG means changing injectors and re-commissioning the appliance: Gas Safe work, not a jet swap.
Which fryer spares are worth keeping?
Fryers fail at the worst possible moment, so a small parts box pays for itself the first time you use it:
- A thermocouple in the correct length and thread — by a distance the most replaced part on a gas fryer
- A spare high-limit stat if your fryer is older
- A pilot burner assembly for anything with a few years on it
Measure before you order. Thermocouples are not universal — length and thread must match, and the same fryer model can carry different pilot assemblies depending on build year.
Can I repair a commercial gas fryer myself?
Diagnosing is fine and worth doing: checking oil level, looking at the flame, resetting a high limit once, verifying temperature with a probe, working out which part has failed.
Fitting gas parts is not. In the UK, work on commercial catering gas appliances must be carried out by a Gas Safe registered engineer holding the commercial catering qualifications. That covers gas valves, burners, injectors and pilot assemblies. Identify the fault, order the right part, get it fitted and leak-tested properly.
And the one absolute: never bypass, jumper out or defeat a high-limit safety cut-out. It is the last thing standing between hot oil and a fire.
Frequently asked questions
Where is the reset button on a commercial fryer?
Usually a small button behind the front panel or door, often protected by a rubber cap and marked as a high-limit reset. It will only reset once the oil has cooled below the trip point. If it won't reset, the oil is still too hot or the stat has failed.
My fryer lights but cuts out after about 30 seconds — why?
Textbook weak thermocouple. It generates enough voltage while you hold the knob, but not enough to hold the valve magnet in on its own. Check the pilot flame is enveloping the tip, then replace the thermocouple.
Can a dirty fryer cause heating problems?
Yes, and more often than people expect. Carbon on the heat exchange tubes insulates them, oil vapour blocks pilot orifices, and grease on the burner restricts gas. A proper deep clean fixes a genuine share of "faults".
Should I replace the thermostat or the high limit?
If the fryer overheats and trips out, suspect the operating thermostat — the high limit is catching a fault, not causing it. If the fryer won't heat at all and the pilot is fine, a failed-shut high limit is a strong candidate.
