Commercial Salamander Grill Troubleshooting Guide
Salamanders are simple machines, which is good news when they break. There is usually no thermostat, no fan and no complicated control — just gas, a pilot, a burner and a safety system. That means the fault list is short and the diagnosis is quick.
What makes them awkward is position: the burner sits above the food, so fat and steam rise straight into the burner and pilot all day. Most salamander faults come from that. For the parts, see all gas equipment parts.
Why won't my salamander grill light?
Rule out gas supply first — is the isolation valve fully open, and is other gas equipment in the kitchen working? Then work the pilot and ignition chain:

Because a salamander's pilot sits under the burner and above the food, it collects grease faster than the pilot on almost any other appliance. Cleaning the pilot assembly is always worth doing before condemning parts.
Why does the pilot go out when I let go of the knob?
This is the thermocouple circuit, and it works the same way on every gas appliance in the kitchen.
The pilot flame heats the thermocouple tip, which generates roughly 25–30 millivolts. That small voltage energises an electromagnet inside the gas valve, and the energised magnet is the only thing holding the gas port open. Release the knob before the tip is hot, or run a thermocouple that has weakened with age, and the magnet drops out and the gas shuts off.
Check in this order:
- Hold the knob in for 20–30 seconds. If it holds when you hold it longer, the thermocouple is weak and due for replacement.
- Look at the pilot flame. It should be crisp blue and long enough to wrap the thermocouple tip. Small, lazy or yellow means it isn't heating the tip properly.
- Clean the pilot orifice. On a salamander this is the single most likely cause of a weak pilot.
- Check the tip position. It must sit in the flame, not near it. Easily knocked when the grill bars or trays come out.
- Check the nut at the valve. Finger-tight plus a quarter turn — over-tightening is a common way to kill a new thermocouple.
New thermocouple fitted, strong blue pilot, and it still drops out? The electromagnet in the gas control valve has failed — it can no longer hold on the voltage it's given. On many valves the magnet unit is a separate and much cheaper part than the complete valve.
Why isn't my salamander getting hot enough?
Salamanders mostly run flat out rather than to a setpoint, so "not hot enough" is nearly always a gas rate problem at the burner.
- Blocked burner ports. Fat and carbon build up in the ports and cut the gas rate. This is the most common cause by a wide margin.
- Worn or blocked burner jets. A jet that has eroded, corroded or been drilled out at some point delivers the wrong gas rate permanently — replace rather than clean.
- Air shutter closed too far on the venturi, giving a soft, poorly burning flame.
- Supply pressure low — if other appliances are weak at the same time, it's the supply, not the grill. That needs an engineer with a manometer.
Also check the obvious: on models with an adjustable grill height or sliding shelf, a rack set too low simply won't brown properly, and that is not a fault.
Why is my salamander browning unevenly?
Diagnose with the flame, not with the food. Run the burner and look along its full length.
- Even, crisp blue across the whole burner — the burner is fine. Look at rack height, loading and how the product is spread.
- Dead or weak sections — blocked ports in exactly the zone that isn't browning. Clean them out.
- Yellow or lazy flames throughout — an aeration problem, see below.
- One whole burner out on a multi-burner unit — that burner's jet or its ignition.
On units with ceramic or radiant plaques, inspect them too: cracked, broken or heavily fouled radiants give patchy heat even when the burner behind them is perfect.
Why is the flame yellow instead of blue?
Salamander burners should burn blue. Yellow, soft or lifting flames mean the air-to-gas mixture is wrong, and incomplete combustion produces carbon monoxide — which matters more than usual on a salamander, because it sits at head height in front of a chef.
Causes, in order:
- Air shutter on the venturi closed too far — starves the burner of primary air
- Grease or debris in the venturi — same effect, common given the position
- Blocked or worn burner jets
- Wrong jet for the gas type after a conversion
- Incorrect supply pressure
Persistent yellow flames with sooting are a fault to act on. Isolate the appliance and get it checked.
Why does the control knob spin without doing anything?
Usually the knob, not the valve. Salamander knobs sit directly below a hot burner and the plastic splines soften and round off with heat. Once rounded, the knob turns freely without moving the spindle. Replacement control knobs are one of the cheapest parts you can buy.
If the spindle itself is stiff or sloppy, or gas passes when the tap is off, the valve body is at fault and needs replacing.
What gas pressure should a UK salamander run at?
UK commercial catering appliances are set up around 20 mbar for natural gas and 37 mbar for propane (LPG) — not the inches of water column quoted by American troubleshooting articles. The correct figure and injector for your gas type are on the appliance data plate.

How do I keep a salamander reliable?
Everything on this list is a grease problem waiting to happen, so the maintenance is simple:
- Clean the burner and pilot area on your deep-clean cycle — not just the grill bars and drip tray
- Keep the drip tray emptied so fat doesn't back up into the burner area
- Check pilot flame quality occasionally while it's working, so you spot a weakening pilot before it strands you
- Keep a spare thermocouple in the right length and thread on the shelf
Can I repair a commercial salamander myself?
Diagnosing and cleaning are fine: clearing burner ports, cleaning the pilot and electrode, checking flame colour, identifying the failed part.
Fitting gas parts is not. In the UK, work on commercial catering gas appliances must be carried out by a Gas Safe registered engineer holding the commercial catering qualifications. My salamander lights but cuts out after about 30 seconds — why?
Textbook weakening thermocouple: enough voltage while you hold the knob in, not enough to hold the valve magnet once you release it. Check the pilot flame is enveloping the tip, then replace the thermocouple.
Do salamanders have a thermostat?
Most don't — they run on a simple gas tap, and you control cooking with rack height and burner selection. So if a salamander isn't hot enough, look at the burner and the gas rate, not at temperature control.
Why does my salamander pilot keep clogging?
Because it sits underneath the burner and above the food, so rising fat and steam land on it constantly. It's the nature of the equipment. Include the pilot in the cleaning routine rather than waiting for it to fail.
Can I clean burner ports instead of replacing the burner?
Usually yes — most "weak burner" faults are cleaned back to health. Replace the jet when it's eroded or corroded, and replace the burner when the ports themselves have burnt out or the casting has cracked.
