Commercial Gas Oven and Range Troubleshooting Guide
A commercial range that won't light at 6pm is a service-stopping problem. The good news: gas ovens and ranges fail in a small number of predictable ways, and the parts that fail are cheap compared with the callout. This guide walks the faults in the order an engineer actually checks them, so you can identify the failed part before you pick up the phone.

Why won't my commercial gas oven light at all?
Start with gas, not parts. Three checks take two minutes and rule out the most common non-fault:
- Is the isolation valve fully open? A partly open valve gives just enough gas for a pilot and not enough for the main burner.
- Has anything else in the kitchen lost gas? If the fryer is dead too, the problem is the supply or the meter, not the oven.
- Is the appliance actually cold? Some ranges will not relight until the safety system has cooled and reset.
If gas is present and it still won't light, move to the pilot and ignition sections below.
Why does the pilot go out when I release the control knob?
This is the single most common gas fault in a commercial kitchen, and it is nearly always the thermocouple.
Here is the chain it belongs to. The pilot flame heats the thermocouple tip. The heated thermocouple generates a small voltage — around 25–30 millivolts. That voltage energises an electromagnet inside the gas valve, and the energised magnet is the only thing holding the gas port open. Let go of the knob before the thermocouple is hot, or use a thermocouple that has weakened with age, and the magnet drops out and the gas shuts off.
That is the safety system doing its job. It just cannot tell the difference between "the flame blew out" and "the sensor is worn out".
Work through it in this order:

If a known-good thermocouple is fitted, the pilot is strong and blue, and it still drops out — the fault has moved to the electromagnet inside the gas control valve. On many valves the magnet unit is a separate, far cheaper part than the complete valve.
Why does the burner spark but not light?
If you have spark and gas but no flame, or no spark at all, the fault is in the ignition system rather than the burner.
- No spark, no click — the piezo or spark generator. Browse ignition parts.
- Clicking but no visible spark — usually the electrode: cracked ceramic, carbon tracking across the insulator, or grease bridging the tip. A cracked electrode leaks the spark to earth before it ever reaches the burner.
- Weak or intermittent spark — the HT lead. These perish with heat, and a lead arcing to the chassis steals the spark.
- Spark present, gas present, no light — the electrode is out of position relative to the burner port.
On electrode position: the gap is set by the manufacturer and it is model-specific. Check your manual or data plate rather than guessing — bending an electrode "closer" is one of the most common ways a working ignition system gets made worse.
Why is my oven heating unevenly?
Most sites will tell you to level the unit. Level it, by all means — but on a commercial range the usual culprit is blocked burner jets.
Burner ports and orifices are small, and a commercial kitchen fills them with grease, carbon and spilled food. Partially block them and gas flow drops on that section of burner. The result is exactly what you see on the plate: one side fine, one side cold.
Diagnose it with the flame, not the food. Run the burner and look along it:
- Even, crisp blue across the whole burner — burner is fine, look at the thermostat.
- Some ports lit, some dead or weak — blocked ports. Clean them, and replace the burner jets if they're eroded or corroded.
- Orange or yellow tips across the whole burner — an aeration problem. See the flame section below.
Also check the obvious operational causes before condemning a part: an overloaded oven blocks heat circulation, and a door seal that no longer closes properly will always cook unevenly.
Why won't my oven hold its set temperature?
If the oven lights, burns cleanly, but runs hot, runs cold, or drifts, you are looking at the thermostat — and very often at its capillary bulb rather than the thermostat body.
The bulb is the sensing end: a thin tube clipped inside the oven cavity. It reads the temperature and the thermostat modulates the gas to match. Two things go wrong:
- The bulb has come out of its clips. After a deep clean or an element change, the bulb often gets left hanging in the cavity instead of returned to its mounting. It then senses air rather than its intended position, and the oven runs wild — usually far too hot.
- The capillary is kinked or fractured. The fluid inside is what drives the thermostat. Lose it and the thermostat fails, typically to fully open or fully shut. A kinked capillary cannot be repaired.
Before replacing anything, verify the fault with an oven thermometer you trust. Set the oven to a known temperature, let it cycle, and compare. A thermostat that is simply out of calibration can sometimes be adjusted; one whose bulb or capillary has failed must be replaced.
Why is the flame yellow instead of blue?
A correctly burning gas flame is blue. Yellow, lazy or lifting flames mean the air-to-gas mixture is wrong, and that matters for more than cooking performance — incomplete combustion produces carbon monoxide.
The usual causes, in order:
- Air shutter closed too far on the burner venturi — starves the burner of primary air and gives soft yellow flames that soot the pans.
- Blocked or worn burner jets — wrong gas rate for the burner.
- Wrong jet for the gas type — a natural gas jet running on LPG, or the reverse, after a conversion.
- Supply pressure wrong — needs testing with a manometer by an engineer.
Yellow flames plus soot, plus a smell, plus staff with headaches is an emergency. Shut the appliance down, ventilate, and call a Gas Safe registered engineer.
What gas pressure should a UK commercial oven run at?
This is where most troubleshooting articles will mislead you, because most of them are American and quote inches of water column.
In the UK, commercial catering appliances are set up around 20 mbar for natural gas and 37 mbar for propane (LPG). Your appliance data plate will state the correct figure and the correct injector marking for your gas.
Two practical consequences:
- Threads are BSP, not the NPT sizes quoted on American parts sites. Check before ordering gas pipe fittings.
- Converting between natural gas and LPG means changing injectors and re-setting the appliance. It is not a jet swap you do yourself — it is Gas Safe work, and the appliance must be re-commissioned afterwards.
Why does the control knob spin without doing anything?
Usually the knob itself rather than the valve. The plastic splines soften and round off with heat, and once rounded the knob turns without moving the spindle. Replacement control knobs are one of the cheapest parts on the appliance.
If the spindle itself is stiff, sloppy or leaks gas past the tap, the valve body is at fault and the tap needs replacing.
Which spares are worth keeping on the shelf?
A small parts box turns a lost service into a twenty-minute interruption. For a gas range, the sensible holding is:
- A thermocouple in the right length and thread for your appliance — the most frequently replaced gas part there is
- A spare control knob
- A pilot burner assembly if your range is more than a few years old
Check the thread and length against your existing part before ordering — thermocouples are not universal, and the same appliance model can be built with different pilot assemblies across production years.
Can I fix a commercial gas oven myself?
You can diagnose freely. Looking at flames, checking whether a bulb is in its clips, cleaning a pilot, and identifying which part has failed are all sensible things for a kitchen to do.
Fitting is different. In the UK, work on commercial catering gas appliances must be carried out by a Gas Safe registered engineer holding the commercial catering qualifications. That covers gas valves, injectors, burners, pilot assemblies and any work that breaks a gas joint. Diagnose the fault, order the right part, and have it fitted and tested properly — that is the fast, legal and insurable route.
Frequently asked questions
Why does my oven light and then cut out after about 30 seconds?
The classic signature of a thermocouple circuit that is almost working. The thermocouple is generating some voltage but not enough to hold the valve magnet in once you release the knob. Check the pilot flame is properly enveloping the tip first, then replace the thermocouple.
Do I need the exact thermocouple for my model?
You need the correct length and thread, not necessarily the original branded part. Measure the existing one and check the thread at the valve end. Universal thermocouples cover a wide range of appliances, but a too-short one simply won't reach.
My oven cooks hotter than the dial says — is the thermostat broken?
Check the capillary bulb is clipped in its correct position first. A bulb hanging loose in the cavity is the most common cause of an oven that runs hot, and it costs nothing to put right.
Is a yellow flame dangerous?
Treat it as a fault, always. Yellow flames mean incomplete combustion, which produces carbon monoxide. Isolate the appliance and get it checked.
