Use a turner as a scraper and you bend it. A turner is designed to flex so it can slide under a fillet — which is exactly the wrong property for shoving carbon off a plate. It will distort, and then it won't slide under food properly either. You have ruined a £9.99 tool to avoid buying an £8.99 one.

Why scrape the griddle hot?

Because carbon comes off a hot plate and welds itself to a cold one.

  • Hot residue is soft. It scrapes away with almost no effort.
  • Cold residue is baked on. Now you're chiselling, and chiselling is how plates get gouged.
  • Carbon build-up creates hot and cold spots — it insulates parts of the plate. That is why one end of your griddle cooks faster than the other.
  • A dirty plate makes food stick, which tears it and slows the whole section down.

Scrape between batches and properly after every service, while the plate is still hot. Follow your griddle manufacturer's cleaning guidance — some plates have specific requirements, and chrome griddles in particular need care.

Push the residue to the grease trough. Don't grind it around the plate.

Match the width to the plate. A narrow scraper on a big griddle means twice as many passes at the end of a long shift — that's when clean-down gets skipped, and skipped clean-downs are how plates get ruined.

Wooden handles stay cooler than metal ones on a hot plate — worth knowing when you're leaning over a live griddle.

Turners and colour coding

Looking after them

  • Don't leave wooden handles to soak. Wash and dry them — soaking splits and loosens the handle.
  • Replace a bent turner. A distorted blade won't sit flat, so it won't get under food cleanly.
  • Keep the scraper edge straight. A chipped or curled edge gouges the plate.
  • Check the handle rivets. A loose handle on a hot plate is a burn waiting to happen.

Frequently asked questions

How often should I scrape my griddle?

Between batches during service, and a full scrape-down at the end while it's still hot. It takes two minutes hot and twenty minutes cold.

Can I use a scraper on a chrome griddle?

Chrome plates are easily damaged and usually need specific tools and technique. Follow your griddle manufacturer's guidance — do not assume a steel scraper is safe on chrome.

My food keeps sticking to the griddle. Why?

Carbon build-up, nearly always. A clean, properly conditioned plate releases food. Sticking is the plate telling you it needs a proper scrape.

Why is one end of my griddle hotter than the other?

Uneven carbon build-up insulating parts of the plate is a common cause — clean it properly first before assuming a burner or thermostat fault.
